Moist banana cake

Prewarm the oven (180 C).

In a bowl, mix 4 small (or 2 large) very ripe bananas with 2 packs of vanilla sugar and some milk.

In another bowl, add about 100 gr of sugar and 60 gr of softened butter. Mixed with an electrical mixer for 1 or 2 minutes. Added 3 eggs (one at a time) and mix lightly. Add about 150 gr of (cake) flour and 1 teaspoon of baking powder plus some salt to taste. Mix lightly and then add the bananas.

Put the mixture in a baking pan and bake it for about 1 hour at 180C.

Pain Perdu recipe

When I was a child, my mom would make “pain perdu” (also called “French toast”) and I remember not liking it very much. Pain perdu means lost bread or left over. This would usually be two-three days old bread. A way to use it and not waste it. In the Mottainai spirit…

Ingredients:
4 eggs
1 dl milk
a little salt
sugar to taste
3-4 slices of 2cm thick bread (with crust)
1 apple or other fruits to taste
(option: cinnamon)

Pre-heat the oven to 180C.

Mix the eggs with milk, salt and sugar. Cut bread into 2cm squares and put it into the egg mix. Bread must absorb the mix. Let it rest for 5 minutes.

Cut apple in small pieces.

Put the bread egg mix into a baking pan (silicone one will be easier to clean) and add the pieces of apple.

Bake it for 50 minutes.

Enjoy.

Other versions:

(1) I have also used the same recipe replacing apple with canned pear. In this case, I replace sugar with juice from the can (about 1 dl)

(2) For a salty version, remove sugar and fruits and add cheese.

(3) Sweet or salty version, in a fry pan: cut slices of bread (instead of cubes) and bake in a fry pan instead of oven.

Banana muffin recipe

Here is my banana muffin recipe:

Preheat the over to 180 C.

In one bowl, mash 2 bananas, add 40 to 50cc milk and two table spoons (or Japanese large spoons) of sugar. Mix well.

In another bowl, add about 200 gr cake flour (including wholewheat cake flour to taste) and about 40-50 gr of room temperature butter. Mix together. Add 2 small tea spoons of salt and two tea spoons of baking powder. Mix.

Add banana mix to the flour mix and mix some more.

It makes about 7 muffins. Put into the muffin pan.

Bake about 30 minutes. I usually leave the muffins a little longer in the oven while it cools down.

Let the muffins cool down on a grid.

Eat warm. Keep in the fridge. I warm the cold muffins in our oven toaster.


PS: I tried a different version for apple muffins. Once the result is nice, I will post the recipe.

Moist Lemon Cake Recipe (Cake imbibé au citron)

(アンヌローズのおばさんのレモンケーキ)


Ingredients:

* Dough:

250 g butter
250 g sugar
5 eggs
Zest of 2 lemons
250 g flour
2 tbsp baking powder
Some salt

* Sweet lemon juice:

20 ml lemon juice
200 g powdered sugar

Preparation:
Mix butter and sugar until the mixture’s color becomes whitish. Add the eggs one after another while mixing. Add zest, flour, baking powder and salt. Put into a rectangular baking pan (I usually line the pan with baking paper). Bake for about 1 hour at 180 C.

Mix the lemon juice and the powdered sugar. Once the cake is baked, take it out of the oven and leave it in the pan. Make holes in the cake using chopsticks. Pour the sweet lemon juice on the cake, one tablespoon at a time. Refrigerate when cool. It is best eaten cold. You can keep it for a couple of days or freeze it.

Comments:
This Swiss recipe has been passed down in the family on my mom’s side.

You can also adapt the recipe with x portions of 50 g butter, sugar, flour and 1 egg.

Schweizer Kueche: Feine Öpfelchüechli

Die Radio-Sendung “Ratgeber” auf DRS1 (auf Schweizerdeutsch) hat ab und zu auch typisch Schweizer Rezepte, wie zum Beispiel “Feine Öpfelchüechli” (“beignets aux pommes” auf Französisch).

Die Rezepte hier (pdf is hier) kann man auch in einer Pfanne mit wenig Oel kochen.

Tomato Pie recipe

When I was a kid, my mom baked tomato pies.

I recently ate again a tomato bread that reminded me of my mom’s pies.

The thing is, in Japan, unlike in Switzerland, you just can’t get ready-made pie dough in any supermarket (except for a frozen sheet pie). And I never could find a good pie dough recipe.

Clafoutis / クラフティ

On Saturday, I went to Sendai and ate lunch at the Cafe Restaurant Serenity, in Hotel Metropolitan. They had a very nice desert called クラフティ in Japanese. At first, I was wondering what it was. Then, I got it. It means “clafoutis“, a French desert.

Here is a nice recipe  in French (for small dishes).

It seems that the recipe is not always the same. Sometimes, a kind of crepe mixture is used. The restaurant’s recipe seemed to contain some cream cheese.

Originally, it is made with black cherries (cerises noires), but it can also contain other fruits or berries.

I love black cherries, they remind me of my childhood. On the big farm I grew up at, there were black cherry trees and we ate many cherries in summer…

『ザルツブルガー ノッケルン』、何でしょうか?

ドイツ語で ”Salzburger Nockerln” (auch: “Nocken”).

金曜日に国語の勉強のために公文に行きました。公文のH先生は最近あるオーストリアに住んでいるソプラノ歌手のコンサートに行って、『ザルツブルガー ノッケルン』のことを聞きました。金曜日に、『ザルツブルガー ノッケルン』のことを知っているかと訪ねられました。私はこのことをぜんぜん知りませんでした。

インタネットで調べると、オーストリアのザルツブルグ市のお菓子と分かりました。

スイスでこのお菓子のことを今まで聞いたことがありませんでした。

Have you ever heard of “Salzburger Nockerln” (also called: “Nocken”) ?

Last Friday, I went as usual to the nearby Kumon school to study Japanese. The headteacher, Ms. H., told me about a concert she recently went to, where she got to know about “Salzburger Nockerln”. She was surprised that a song was created about such a dish. Since I am from Switzerland and also speak fluently German, she thought that I may know this dessert. I had never heard about it.

I checked the internet (what I usually do when I don’t know something ;-) ) and found some information and very nice pictures. It is a specialty of Salzburg city, a place I have not yet visited. Based on the pictures I could find, it seems that recipes and shapes varies a little depending on who is making the desert.

You can read here in German what Wikipedia writes about it. Interestingly, an information is also available in Japanese, but  nothing in English.
